adding comment to @Tatyana Leifman's reply - if you are using the unpost plug-in it requires user rights and for good reason. You must be very cautious and select the gift query of the gifts you want to unpost. If you hit the box without a query it will unpost every gift in RE!
And after adding appeal you will need to be sure all gifts are marked as posted again or you will mess up your accounting side as gifts will post again.

Glad you got the answer.
To be clear, non-constituent record does not store constituent attribute, database doesn't define non-constituent having attribute.
What you are talking about and looking for, is relationship attribute that's linked to the relationship. (a relationship can exists between constituent and constituent or constituent and non-constituent). The relationship attribute will not show up in the "other side" of the relationship as constituent attribute even if that record is a constituent record.

You can export and query on these attributes in dbv. In export, if you expand Spouse node, you'll see Attributes. If you expand the Relationships node, you'll see Attributes under both Individual Relationship and Organizational Relationship. The same also applies to query—that is, these attributes are found in the same nodes. So you can query upon them too.

Not necessarily. 1. If they are on the Balance sheet, then they should have balances. But all the accounts should net to zero. 2. If they are on the Income statement, then they would zero out at end of every FY and roll up into the Fund balance.
I'd recommend checking the type first and if on balance sheet, confirm they net to zero. If they do, it's operating correctly.

@Austen Brown you are right about it being a band-aids. Just want to make sure the options are considered:
You cannot change default confirmation page, BUT you can have a custom page build and once the transaction is done, donor is directed to that page. It won't have the details of what was "purchased" but at least it won't be confusing. (i.e. Thank you for your purchase, you ordered is being processed, and you will hear from us in X days).
Using the "Other fees" option, there will be no event registrant (participant) records on the constituent record, so that shouldn't be a concern.
The biggest issue I can think of is, there isn't a great "report" that will tell you what was purchased for how many. You can see it in the event record page on NXT, but I don't think a good report is available for this.

A lot of great comments here about how non-gift transactions can muddy the waters. Even if you set up separate campaigns, funds, appeals, and packages; utilize benefits, and set the receipt amount to $0 you should know that the BENCHMARKING Dashboard will still see these transactions as gifts as there are no filters available for that dashboard.
You will also have to train anyone who has access to dashboards that they will need to exclude those transactions by using the filters on the dashboards otherwise folks will be pulling inaccurate acquisition, retention, recaptured information.
