Creating an Event form

Can someone tell me how someone who registrars lists their guests names?

You either offer the ability for donors to add guest names during registration, or you gather that information after the registration happens.  There are pros and cons to each option.  While enabling the guest name option on the form means that the information is communicated directly to your system (event record) it does make the form cluttered and a bit confusing (dependent on the number of participant attributes also included).  If you go for the latter, only collecting registrant information, then it is up to your team/staff to manually follow up with registrants to get guest information.
