Accessing Import fields for mapping collection

Hello,

I am looking for instructions on how to edit collection fields. I can see they have been pre defined else where but can't find the source. When searching the suggestions are all for previous SP. (We are on SP 32.) The KB section does not show me how to edit the collection.
Just looking for some guidance on where to find the collection settings.
