Help with Summer Class Schedule

I'd like to create a summer class schedule for our students who remain with us over the summer. I would be an 8-week class but I'm having trouble figuring out how to schedule those classes in order to add students to the roster. The classes will include current students who are staying with us, some new students who are enrolled for the 2024-25 school year, and possibly even a current student who will attend the summer program but then move on to another school and thus not enrolled for the upcoming school year.

I was playing around with creating a group for them but I'm struggling with the timeframe of that group since it doesn't line up with a specific school year. We are very new to using any Blackbaud solutions and I also need the summer to adjust the rosters for the upcoming school year without the parents or teachers being aware of all the changes.

How do I set up the timeline for the end of my school year, the duration of the summer program, and the start of the new school year? Is my request to manage all of that a pipe dream?
