I just wondering if anyone has any insight on how to filter out spam emails from signing up on our website or afterwards.

there isn't much you can do honestly. you have a public form that's on your website, anyone can send anything they want on these forms.Some form can potentially have spam detection technology, but that depends on what form platform you use and if that platform has that supporting technology
