In this day and age, we've been doing a lot of cooking at home lately, and one of my forgotten favorites is front and center today.  That's right; today is National Lasagna Day!  With so many different variations of this classic dish, you could eat it every day for a week and never have the same thing twice.  There's classic Italian lasagna, vegan and vegetarian versions, Mexican food variations, and even a few dessert lasagna recipes as well.  So what version is your favorite?  Who makes your favorite variation?  We'd love to see your comments below!

My grandmother's lasagna. It's pretty traditional lasagna, but the important part is it's made by her, and that's what makes it most special. I always request it when I visit!

I love traditional lasagna but have celiac so wheat is a no go for me. Now I use zucchini is place of wheat pasta, so good!

I love what I call traditional lasagna. My husband's recipe is my favorite. It was his mom's. He cooks the sauce over a two day period so the flavors are well marinated. It is SO good!

Lasagna soup, my favorite comfort food...so easy to make in the Instant Pot!

I'm a huge fan of lasagna!  I make a massive batch of it up (fairly traditional version - pasta layer, spinach, cheeses, sauce) and freeze half of it (or more) for planned leftovers.
