Receipting and Year end Tax statements

What/how do people issue donation receipts and/or year end tax statements? Email, snail mail, portal? It seems this discussion resurfaces every year within my organization and nothing gets resolved. Donation information in a service center usually only shows info for credit card/ACH recurring giving, so would need to be able to capture all payment methods (CC, ACH/Direct Debit, Cash/Check, etc).
