From an email message in Outlook, you can:

The body of your email should automatically be copied into the notes of the email. A few things to note there are that attachments and html formatting are not currently supported -- only the plain text version of the email content will be copied over. Could you give me more information about what you were doing when you saved the email? What folder were you viewing/saving from (ie: were you composing an email, interacting from your inbox, or your sent folder)?
In terms of adding the action automatically when you hit send, it is a possible enhancement we could make in the future. Or initial discovery led us to believe that adding the actions separately from the send action allows for more flexibility, particularly when composing emails to multiple constituents. It is definitely a potential enhancement we could make though, so I would recommend posting the suggestion on the idea bank and if it gets a lot of votes, we might change the experience on that front.
Thanks for your feedback, and I hope you continue to enjoy the add-in!
