Favorite Holiday Recipe...
It's the season to cook and bake. You all are so helpful with Blackbaud stuff, I thought you could be a good source for some holiday food as well. If you have a holiday “must have” recipe, please share it. Type it out or include a link. Here is mine from my Godmother - a true southerner:
Brown Sugar Pie
3 eggs
1 lb light brown sugar
1 stick butter, melted
2 pinches of salt
2 tablespoons of bourbon
1 pie crust ( I thaw a frozen one)
Whisk the eggs in a large bowl. Completely combine in the sugar, butter, salt, and bourbon. Pour into the pie crust. Bake for 45 minutes at 350 degrees.
It is a sweet, gooey delight.

@Scott Chrysler my favorite cookie to bake for the holidays is the Pecan Sandie rolled in powdered sugar
Ingredients
1 cup
Butter (softened)
½ cup
Powdered Sugar
1 teaspoon
Vanilla
2 ¼ cups
Gold Medaltm All-Purpose Flour
¾ cup
Nuts (finely chopped)
¼ teaspoon
Salt
add
Powdered Sugar
Directions
1. Heat oven to 400°F.
2. Mix butter, 1/2 cup powdered sugar and the vanilla in large bowl. Stir in flour, nuts and salt until dough holds together.
3. Shape dough into 1-inch balls. Place about 1 inch apart on ungreased cookie sheet.
4. Bake 10 to 12 minutes
5. Then roll 2 times in Powdered sugar to coat

One of my favorite cakes was a rolled-pudding cake my sister and I made a long time ago. You can make everything from scratch (we did), but here's the easy mix version:Cook a chocolate cake mix, but pour the batter thin (¾ inch) into a 9x13 pan. You want the baked cake to be about 1" thick.
Whip up 2 boxes of vanilla pudding mix. Alternatively, you can make a custard from scratch: 2 cups milk, ½ cup sugar, & 2 tsp vanilla boiled in a saucepan until hot. Then whip in 2 egg yolks and cornstarch to thicken, stirring slowly over low heat. You want the pudding to be on the thick side.
When the cake is finished but still warm, gently remove it from its baking pan. This is tricky so as not to break it. Ladle some pudding onto the cake and roll the cake around the pudding. It should make a kind of giant twinkie. Set the roll in a smaller pan (breadloaf pan works great) and drizzle a bit of pudding over the top. Cool in the fridge for a couple hours for the pudding to set and flavors to blend.

@Scott Chrysler - We always make at least one batch of my grandmother's sugar cookies.
Ingredients
• ½ Cup of shortening
• ¾ Cup of sugar
• 1 egg
• ½ teaspoon of vanilla extract
• 2-3 tablespoons of milk
• ½ teaspoon of grated orange peel
• 2 cups of enriched flour
• ¼ teaspoon of salt
• ½ teaspoon of baking powder
• Optional, but encouraged: food coloring
Instructions
• Cream the sugar and shortening, then add the egg and beat with a mixer
• Add in the vanilla extract and orange peel
• Add in the sifted dry ingredients – alternate with the milk
• If adding food coloring, add it before chilling the dough.
• Once the dough has chilled, set the oven to pre-heat at 375º and roll the dough until 1/8” thick on a lightly floured surface
• Utilize cookie cutters to create cookies, or free hand shapes with a knife
• Sprinkle the uncooked cookies with sugar before baking
• Bake at 375º for 12 minutes, in the center section of the oven
Family Tradition
Put one cookie in a sandwich bag, close the bag with a ribbon, and hang on the Christmas tree.1 -

@Scott Chrysler - too many favorites to share all of them, but my aunt's peanut brittle is a longstanding tradition.
Rosie's Peanut Brittle- 3 cups of sugar
- 1 cup white Karo syrup
- ¼ lb margarine or butter
- 1 ½ teaspoon baking soda
- ¼ cup of water
- 2 ½ cups of raw Spanish peanuts
- 1 teaspoon salt
- 1 tablespoon vanilla
Prepare baking sheets (at least 2) with parchment paper. Use a bit of butter to ensure that the paper sticks to the baking sheet and also use butter to grease the surface of the paper. Boil sugar, syrup and water to 275 F (use a candy thermometer to test this!). Add peanuts, salt and butter. Boil to 315 F. Remove from heat. Add vanilla and baking soda (stir quickly!). Spread as thin as possible on baking sheets.

@Scott Chrysler, I'm a little slow but very busy. A snack I like to make for family get togethers (that everyone has gone wild over) is Peanut Butter Popcorn. This amazingly addicting treat does NOT make your fingers messy! It's Christmas magic!! ???
-A large batch of popcorn with seeds removed
-½ c Sugar
-½ c Honey
-½ c Creamy Peanut Butter
-½ tsp Vanilla
-1 TBL Coconut Oil
-Pinch of Salt
- Put popcorn into two large bowls.
- Microwave sugar, honey, peanut butter, coconut oil, and salt in a large glass container (or on the stove) until the sugar dissolves. Stir in vanilla.
- Pour half of the peanut butter mixture over each bowl of popcorn. Gently fold the mixture until thoroughly coated. (Work each bowl for a couple of minutes until both are completely coated.)
- Pour onto baking sheet to cool or stir occasionally as it cools.
Note: The popcorn will stick to itself some - just re-fluff it and enjoy!!

@Christine Robertson, I've not found anyone that doesn't go crazy for it! Popcorn is good anyway but people almost fight over this. LOL
