Web forms can be edited after they are created, but there are some exceptions. If you decide to change a price type and tickets have already been sold you can't delete that price type. But you could add another price type and exclude the former type from online sales. And if necessary you could instruct your box office to change their daily sales buttons to reflect this change, if their buttons are built by price type, and just not have a button for that price type.
