Where do I setup a category so I can get it from the category drop down list when creating a scheduled event…Thanks in advance

Configuration > Tables > Events > Category (I think that's the table but there aren't many specific to Events so it should be easy to find)

If you are referring to a scheduled event that occurs under a Program, the category is set at the program level from Code Tables > Program > Program Category

A special event (or fundraising event) can have a separate code table with a potentially different list of categories from program events. That is from Code tables > Event > Event Category
