Checklists for Tours and Open House events - how to process without one?

Hi, we are new to BB, and I need to process people who have signed up for tours and an Open House. To process them requires we give a checklist. We don't have a checklist for events like this and need to know how others get around this. We also don't want to give them a checklist when they are only at the point of a tour or Open House attendance. Help!
