Default Profile Visibility

Hello! I have been asked if we can change the default visibility for information on user profiles. I know that an individual, for example, can choose what information (address, phone number, etc.) to share with each role - but can we set the defaults? For example, can I go and choose that phone numbers NOT be shared by default unless someone wants to share them?
