Does anyone have advice for protecting their intellectual property when it comes to virtual learning?

Given the present time and the online learning that is taking place we would like to explore virtual learning for our organization's training program.

Probably could use some mix of

• employee and volunteer "handbooks" with signed acknowledgement and agreement
• copy write law 
• monitoring
• legal letters to "cease and desist" if violations are found
• password protection + two factor whenever possible
• and more
