How do I enter all my future reservations that have already paid or already made a partial payment?  I don't want to show a balance due in the new system since the payment was made in the old system.

If you don't already have one, you can create a payment method (nonreal, not connected to deposit) to act as a placeholder. At our organization, we named ours "Payment in Prior System." We then just put those deposits in with the placeholder payment with and included the previous sales order in the new sales notes.
