A La Carte Event Selections

Hi all, I was just wondering what everyone's work arounds are for not having a la carte event selections in NXT event forms. Our office is working on our alumni reunion weekend, we wanted options for meals and housing for different days and nights, but we ended up scrapping the package ideas because it was getting too complicated. Are there any work around suggestions that do not make it so the same registrant is filling out their information repeatedly, or where the package options do not get extremely complicated? I found these two ideas to vote on that sum up the issues well:
